Well, I am here to give you the complete information about the Islamic cuisines and delicacies. As you may or may not know about its origin, or how it's done, or how complicated to cook, It is not as simple as you see here in words. In order to cook this, you need to have a lot of patience and ofcourse love for food. 

Today, I am sharing you this recipe, which I have learnt by exploring many places in India. Each and every state in India has its own kind of making the biryani. The taste will definitely alter with change in making, but here I am providing you with the exact and same old recipe of making dum ki biryani. 

Yeah well, you know there are many variations in biryani like Malabar  Biryani,  Awadhi, Hyderabadi Biryani etc., well all rooted from our very own old recipe which is explained below.

Chicken Dum Biryani

List of Ingredients:

  • Basmati rice 
  • Chicken 
  • Desi Ghee
  • Refined Oil
  • Ginger & Garlic Paste
  • Cashew nuts
  • Fresh coconut
  • Poppy Seeds
  • Tomato slices
  • Green Chillies
  • Coriander leaves
  • Mint leaves
  • Curd
  • Kasuri Mheti
  • All Spices
  • Salt
  • Red Chilli powder 
  • Turmeric
  • Fried Brown Onion

Preparation:

Before starting the process, I want to give you some information about the quantity of the rice and chicken. If one wants to cook 1 Kg of rice, then you should need 1 Kg of chicken too. Rice is same as the quantity of chicken.

Let's Start then!

Step 1: Soak the Basmati rice in sufficient amount of water before cooking. Rice must be soaked an hour or atleat half an hour. 

Step 2: Now, in this step, you need to make saalan and it starts with marination. Take a wide pan or bowl, then add cleansed chicken with zero amount of water in it. Now to that, add ginger and garlic paste to chicken. Then make a paste of poppy seeds, coconut and cashew all together and add to the chicken. Also, add Fried brown onions and spare some later. Now make a powder of spices and the mixture contains cinnamon, cloves, cardamon, mace, nutmeg, kapok buds,star anise and caraway seeds.  Now this is called all spice powder and spare some later to cook rice. Add coriander seeds and cumin powder too into the chicken. Now add curd, Tomato slices, green chillies, turmeric powder, red chilli powder, salt to taste. Now add refined oil to chicken and finally  coriander, mint leaves, kasuri methi or fenugreek leaves and mix it well. Add all the ingredients as per the reqirements and taste. Now let it rest for half an hour so that the entire flavours may get soaked in to the chicken.

Step 3: TO BOIL RICE

Now when the rice is soaked for an hour or so, put it on heat and add the salt required, then all spice powder which was kept aside during step 2 and finally add ghee. In order to boil rice, we need correct measurements, else the rice gets sticky. So for 1 Kg of rice, we need to add 3 Kg of water to the Basmati rice to boil. Similarly, as the quantity increases we need to increase water content. Now the rice need to be only half boiled. When the time is right, put off the heat and place it aside.

Step 4: To make Chicken curry, which is "SAALAN"

Place a wide Dabra, a wide pan on heat. Now add the oil to dabra. When the oil is heated up, add marinated chicken in to the pan and cook for some time. Make sure to cook the chicken well, not half cooked like rice but fully cooked. When the chicken is cooked, make sure the curry has some liquid in it not evaporated entirely. Now put out the flame and add garam masala powder or the five spice powder with lemon juice. Now place it aside.

Step 5: MAKING OF DUM BIRYANI

Take a wide and thick bottom Dabra twice the size of Chicken. Now we need to place the rice and chicken into the Dabra layer by layer. So, first take rice and spread across the Dabra, this is the first layer. Now coming to the second layer, spread the 'Saalan' on the rice without disturbing the first layer. Alternatively the third and the fourth layer continues. Make sure that the last and the final layer is rice. Now on top of all, add coriander and mint leaves, Garama masala, Desi Ghee. Now add edible food color (red)/(yellow) on the top, or add kesar milk on the top. Finally complete the top by adding fried brown onions. Cover with the lid and dum for some time, until the rice is fully cooked. Now the  "Chicken Dum Ki Biryani" is ready.
